Just like a calzone

This is a dish I have made my family oodles of time. It is almost like a calzone. But without the cheese, without the red sauce and a slight twist,...I made it with a delicious crunchy sesame seed bread. Okay so it's not really like a calzone. Hah! But it is the only way I could describe it to make my finicky child eat it! I mean, this was a child that could convince any parent that she is allergic to greens! And for that reason, the only safe meal to feed her during a sleepover was pizza! So to all of you that are raising children suffering from "greens" allergy, have fun making this delicious no dairy calzone recipe ;)

And if you are successful in the scallions, you may want to try different kinds of greens such as spinach, chopped broccoli, mushroom. Just proceed with caution, too much greens in this calzone may set you back to those cheesy pizza meals only again!


This is an easy sesame seed bread that I've added a little twist with stuffed seasoned shredded beef! Yumm! Make it a simple meal served with a bowl of soup. Or turn it into a hearty dinner next to a side of good Texas style chili. Either way you can't go wrong with it.


Ingredients

2 1/2 cups all purpose flour

1 tsp sugar

1&1/2 tsp salt

1 tbsp vegetable oil

1 tsp instant yeast

1 cup lukewarm water

Fillings

1/2 cup chopped scallions

4 tbsp white sesame seeds

1 lb cooked shredded heel of round roast (recipe is included at the end of page if you're interested)


In a large bowl combine everything except your fillings ingredients.

Combine and knead till dough comes together. You could do this by hand or use your kitchen aid mixer with the hook attachment (about 3 - 5 mins). Dough will be sticky. Place dough in a large oiled bowl. Cover with a plastic wrap and let rest for an hour or so.

Lightly flour a surface and roll your dough out flat. Spread scallion and cooked shredded beef. Then carefully roll it up (like you would a jelly roll cake)





Then form the roll into a spiral. Flatten the spiral gently with the rolling pin to a size that could fit a pan you will be cooking it in. I usually use my cast iron pan so I would have it to about 9" wide. Sprinkle with 1/2 of the sesame seed all over top of bread. Let it rest for another 20 minutes.

Heat your cast iron or a heavy skillet over medium heat. Add oil. Slide your bread in (sesame seed side down) & cook covered for about 8 minutes. Flip and sprinkle remaining sesame seeds. Cover and cook another 8 minutes. Remove to your cutting board. Slice and serve.



Easy shredded beef recipe

Place heel of round roast in a slow cooker or crock pot covered in chopped garlic, julienne onions & ginger, freshly crushed pepper, seasoned with salt (don't be shy with seasoning or salt), and about 1/4 cup water. The juices from the meat will ooze out and eventually give you a nice liquid for thickening. Cook till meat is fork tender. Shred and mixed with juices. Now it's ready to be use in our bread recipe. Or any easy dish like tacos, sandwiches or anything your heart desire.
